     VEGETABLE CLEAR SOUP

 

It was always so difficult to have something like green veggies, since it was cumbersome to cook, not very palatable, even knowing the fact how essential it is in  our routines, for its health benefits, the facial glow it brings and overall bodily health as its the only natural sources of all major vitamins and minerals.

Taking the above into consideration , we make the most palatable appetizer out of it, which needs to extensive cooking.                                    

                                                                        

 

You may use anything and everything in your fridge. I mean any damn vegetable.

The below mentioned veggies can be modified as per the  availability/ taste -:

Mushrooms(washes and cut in any way) : 5-6   

Red Carrot (peeled and sliced; vertical/horizontal) : 2-3 

Raddish (peeled and sliced) : 1          

Salt

White pepper powder

Black pepper powder

Peppercorns :4-5

Lemon juice

Chinese Cabbage (or any other)

Babycorn (sliced vertically)

Green peas : 1/2 a cup

Whole fresh green chilli

Brocollii : 3-4 pieces cut

Water 

anything else you want to.

[ Your option of adding a tbsp of vegetable oil, but ideally doesn't make much difference to the taste. We tend to keep it completely non oily since we take that oil much more than needed in many other indulgences ]

There is nothing  much to do actually.  Take a big pan, add 1-2 litres of water, all the above mentioned chopped veggies, peppercorns, a tbsp and a half of salt, 1 1/2 tsp each of white and black powdered pepper. Close the lid and allow it to boil on medium/high flame for 15-20 min. Open the lid and squeeze a few drops of lemon juice to get that tangy flavour, pour it in the bowl and sip it. That's all about it!

Serves 3-4 people and served hot in a mug/ soup bowl. Its one its king most healthy appetizer.
