One of the healthiest, simple recipes which can be cooked and even fed and liked by kids.
Palak - a bunch
Boiled chickpea (white chana, a handful)
Cook rice as you normally would and keep aside.
In a pan, boil palak in little water. After its blanched, puree it with green chilli (optional) and coriander.
In another pan, take a tsp ghee, add onion till light golden, saute it with ginger and bay leaf, salt to taste. Add to this the rice and palak puree. Mix all well.Squeeze a lemon over it.
You may top tis dish with grated coconut and some chickpea , both of which depends on your taste.
